Course Outline and Method

"You are what you eat", yet many of us do not know or question much about what we are eating and why. Food is intimately connected to the issues of health, environment, and society, yet these issues are often discussed separately, leading to ineffective solutions and actions in the face of complex contemporary issues. In this course, we will explore the topic of food and agriculture through reading a text by one of the foremost critical social theorists on food, Michael Carolan. We will begin by discussing our assumptions about food in our lives, and around the globe, and why we should care so that we can create a more sustainable and just future for everybody.

Student Attainment Objectives

After taking this course students will be able to
1. Better understand the critical issues around food and how it is connected to health, environmental and social justice issues.
2. Gain critical and solution oriented thinking skills.
3. Increase confidence in listening and discussion skills in English.
