Course Outline and Method

Japanese food culture, performing and traditional arts, as well as the environmental background to these topics is something which to date, many international students have come to understand and appreciate. Gaining an understanding of these topics is absolutely essential to understanding Japan. What’s more, behind the curtain, Japanese technology and artisanal techniques are the backbone supporting these cultural endeavors. Learning about these technologies and artisanal techniques gives the learner a heightened understanding of Japanese culture overall.
In this course, traditional Japanese food, the technologies and artisanal techniques supporting those food traditions, as well as the environmental background surrounding them will be observed. Through guided tours and hands-on practical lessons, students will gain a deepened understanding of Japanese culture. Further, Japanese students are scheduled to join the guided tours and practicals scheduled for this course, offering international students an excellent opportunity for interaction with their Japanese peers. As this course includes many off-campus visits and guided tours, as a rule, sessions are scheduled to be held on weekends. (Please be aware that the order in which the scheduled visits and tours are to be held is subject to change.)

Student Attainment Objectives

1) Japanese food culture, the technology supporting the Japanese culinary scene, and the environmental background to these topics will be discussed, and details will be learned, through lectures, guided tours and practical sessions.

3) Students will be able to develop their own opinions and perspectives regarding the above, and share them in writing and via spoken word with others.
